Mushroom BBQ Bacon Cheeseburger Stuffed Peppers

A hearty, high-protein dinner that captures classic cheeseburger flavors inside roasted bell peppers.

Ingredients

For the peppers

  • 4 large bell peppers, halved lengthwise and seeded

  • 1 tbsp olive oil

  • Salt and pepper

For the filling

  • 1 lb (450 g) ground beef

  • 6 slices bacon, chopped

  • 8 oz (225 g) mushrooms, finely chopped

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1/2 cup BBQ sauce

  • 1 tbsp Worcestershire sauce

  • 1 tsp smoked paprika

  • 1/2 tsp salt

  • 1/4 tsp black pepper

Instructions

  1. Roast the peppers

    Preheat the oven to 375°F (190°C). Brush the pepper halves with olive oil and season with salt and pepper. Place cut-side up in a baking dish and roast for 15 minutes.

  2. Cook the bacon

    In a large skillet over medium heat, cook the bacon until crisp. Transfer to a paper towel-lined plate, leaving about 1 tbsp of bacon fat in the skillet.

  3. Cook the mushrooms and aromatics

    Add the mushrooms and onion to the skillet. Cook for 5–7 minutes until softened and most of the mushroom moisture has evaporated. Stir in the garlic and cook for 30 seconds.

  4. Brown the beef

    Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.

  5. Season the filling

    Stir in the BBQ sauce, Worcestershire sauce, smoked paprika, salt, and pepper. Return the bacon to the skillet and mix well.

  6. Stuff the peppers

    Remove the peppers from the oven. Divide the filling among the pepper halves and top each with shredded cheddar cheese.

  7. Bake

    Return to the oven and bake for 15–20 minutes, until the cheese is melted and bubbly and the peppers are tender.

  8. Serve

    Drizzle with additional BBQ sauce and garnish with parsley or green onions if desired.
