Slow Cooker Pepper Steak & Veggies
Ingredients
- 1½ lbs (700 g) ground beef or thin sliced beef strips
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small onion, chopped
- 2 carrots, sliced
- 1 cup mushrooms, sliced
- 3 garlic cloves, minced
- 2 cups beef broth
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 can diced tomatoes (optional)
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp black pepper
- Salt to taste
- 2 tbsp cornstarch + 2 tbsp water (for thickening)
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet and brown the beef for 5–7 minutes.
- Add the beef to the slow cooker.
- Add peppers, onion, carrots, mushrooms, and garlic.
- Pour in beef broth, soy sauce, Worcestershire sauce, diced tomatoes, and tomato paste.
- Season with paprika, Italian seasoning, salt, and pepper.
- Stir everything well.
- Cover and cook:
- LOW for 6–7 hours
- or HIGH for 3–4 hours
- In the last 20 minutes, mix cornstarch with water and stir into the slow cooker to thicken the sauce.
- Serve hot over rice, mashed potatoes, or noodles.
Optional Additions
- Add potatoes for a heartier meal
- Use steak strips instead of ground beef
- Add chili flakes for heat
