Slow Cooker Pepper Steak & Veggies

Ingredients

  • 1½ lbs (700 g) ground beef or thin sliced beef strips
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small onion, chopped
  • 2 carrots, sliced
  • 1 cup mushrooms, sliced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 can diced tomatoes (optional)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • Salt to taste
  • 2 tbsp cornstarch + 2 tbsp water (for thickening)
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet and brown the beef for 5–7 minutes.
  2. Add the beef to the slow cooker.
  3. Add peppers, onion, carrots, mushrooms, and garlic.
  4. Pour in beef broth, soy sauce, Worcestershire sauce, diced tomatoes, and tomato paste.
  5. Season with paprika, Italian seasoning, salt, and pepper.
  6. Stir everything well.
  7. Cover and cook:
    • LOW for 6–7 hours
    • or HIGH for 3–4 hours
  8. In the last 20 minutes, mix cornstarch with water and stir into the slow cooker to thicken the sauce.
  9. Serve hot over rice, mashed potatoes, or noodles.

Optional Additions

  • Add potatoes for a heartier meal
  • Use steak strips instead of ground beef
  • Add chili flakes for heat
