Slow Cooker Beef Stew Recipe

Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 4 cups beef broth
  • 4 medium potatoes, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 tbsp flour or cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp parsley
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef chunks for 3–4 minutes.
  2. Add potatoes, carrots, celery, onion, and garlic to the slow cooker.
  3. Place browned beef on top.
  4. In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, flour, salt, pepper, thyme, and parsley.
  5. Pour mixture into the slow cooker.
  6. Cover and cook:
    • Low: 7–8 hours
    • High: 4–5 hours
  7. Stir before serving. Garnish with fresh parsley if desired.

  • Red wine for deeper flavor
