Slow Cooker Beef Stew Recipe
Ingredients
- 2 lbs beef stew meat, cut into chunks
- 4 cups beef broth
- 4 medium potatoes, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 2 tbsp flour or cornstarch
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp parsley
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef chunks for 3–4 minutes.
- Add potatoes, carrots, celery, onion, and garlic to the slow cooker.
- Place browned beef on top.
- In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, flour, salt, pepper, thyme, and parsley.
- Pour mixture into the slow cooker.
- Cover and cook:
- Low: 7–8 hours
- High: 4–5 hours
- Stir before serving. Garnish with fresh parsley if desired.
