Ingredients

Instructions

1. Make the Crust

  1. Crush the chocolate cookies into fine crumbs.
  2. Mix with melted butter.
  3. Press firmly into a baking dish or square pan.
  4. Chill in the fridge for 15 minutes.

2. Prepare the Peanut Butter Filling

  1. In a bowl, beat:
    • peanut butter
    • cream cheese
    • powdered sugar
    • vanilla
  2. Fold in the whipped topping gently.
  3. Spread evenly over the chilled crust.
  4. Refrigerate while making the ganache.

3. Make the Ganache

  1. Heat heavy cream until hot (not boiling).
  2. Pour over chocolate chips.
  3. Let sit 2 minutes.
  4. Stir until smooth and glossy.
  5. Mix in butter for extra shine.

4. Assemble

  1. Pour ganache over the peanut butter layer.
  2. Smooth the top with a spatula.
  3. Refrigerate for at least 4 hours (overnight is even better).
