White Chocolate Macadamia Nut Cookies
Ingredients:
• 1 cup unsalted butter, softened
• ¾ cup granulated sugar
• ¾ cup packed brown sugar
• 2 large eggs
• 2 tsp vanilla extract
• 2½ cups all-purpose flour
• 1 tsp baking soda
• ½ tsp salt
• 1½ cups white chocolate chips
• 1 cup macadamia nuts, roughly chopped
Method:
1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and creamy.
3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
4. In a separate bowl, whisk together the flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet mixture and mix just until combined.
6. Fold in the white chocolate chips and chopped macadamia nuts.
7. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
8. Bake for 9–12 minutes, until the edges are lightly golden but the centers still look slightly soft.
9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
10. Serve warm or at room temperature with a glass of cold milk.
