  1. Make the filling: Add peaches, sugar, brown sugar, cinnamon, nutmeg, vanilla, lemon juice, and butter to a saucepan over medium heat.
  2. Cook for 5–7 minutes, stirring occasionally.
  3. Mix cornstarch and water in a small bowl. Stir into the peaches and cook for another 1–2 minutes, until thickened.
  4. Remove from heat and let the filling cool completely.
  5. Place an egg roll wrapper on a clean surface. Add about 2–3 tbsp peach filling in the center.
  6. Fold the sides inward, then roll tightly. Brush the final corner with beaten egg to seal.
  7. Heat oil to 350Β°F (175Β°C).
  8. Fry the egg rolls in batches for 2–3 minutes per side, until crisp and golden.
  9. Drain on paper towels and dust with powdered sugar.
  10. For the glaze, whisk powdered sugar, milk, and vanilla together. Drizzle over the warm egg rolls.
