π COBBLER EGG ROLLS
Crispy golden egg rolls filled with warm, sweet, cinnamon-spiced fruit cobbler filling. Serve them with vanilla ice cream for the ultimate dessert! π
π Ingredients
For the filling:
- 4 cups fresh or canned peaches, diced
- Β½ cup granulated sugar
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- ΒΌ tsp nutmeg
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 2 tbsp cornstarch
- 2 tbsp water
- 1 tbsp butter
For the egg rolls:
- 12 egg roll wrappers
- 1 egg, beaten
- Oil, for frying
- Powdered sugar, for serving
Optional glaze:

- 1 cup powdered sugar
- 2β3 tbsp milk
- Β½ tsp vanilla extract

- Make the filling: Add peaches, sugar, brown sugar, cinnamon, nutmeg, vanilla, lemon juice, and butter to a saucepan over medium heat.
- Cook for 5β7 minutes, stirring occasionally.
- Mix cornstarch and water in a small bowl. Stir into the peaches and cook for another 1β2 minutes, until thickened.
- Remove from heat and let the filling cool completely.
- Place an egg roll wrapper on a clean surface. Add about 2β3 tbsp peach filling in the center.
- Fold the sides inward, then roll tightly. Brush the final corner with beaten egg to seal.
- Heat oil to 350Β°F (175Β°C).
- Fry the egg rolls in batches for 2β3 minutes per side, until crisp and golden.
- Drain on paper towels and dust with powdered sugar.
- For the glaze, whisk powdered sugar, milk, and vanilla together. Drizzle over the warm egg rolls.

Serve warm with a scoop of vanilla ice cream, caramel sauce, or a little cinnamon sugar.
