Chicken & Dumplings
The Ingredients:
For the Chicken:
• 2 lbs boneless, skinless chicken thighs
• 2 tbsp butter
• 1 medium onion, chopped
• 2 carrots, sliced
• 2 celery stalks, sliced
• 3 cloves garlic, minced
• 6 cups chicken broth
• 1 tsp dried thyme
• ½ tsp poultry seasoning
• ½ tsp black pepper
• Salt, to taste
For the Dumplings:
• 2 cups all-purpose flour
• 1 tbsp baking powder
• ½ tsp salt
• ¾ cup whole milk
• 3 tbsp melted butter
The Method:
1. Melt the butter in a large pot over medium heat. Add the onion, carrots, and celery and cook for 5–7 minutes until softened. Add the garlic and cook for another minute.
2. Add the chicken, chicken broth, thyme, poultry seasoning, black pepper, and salt. Bring to a boil, then reduce the heat, cover, and simmer for 25–30 minutes, until the chicken is tender and cooked through.
3. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the broth.
4. For the dumplings, whisk together the flour, baking powder, and salt. Add the milk and melted butter and stir just until a soft dough forms.
5. Drop spoonfuls of the dumpling dough directly into the gently simmering broth, leaving a little space between each dumpling.
6. Cover the pot and simmer for 15–18 minutes. Avoid lifting the lid during the first 12 minutes so the dumplings can steam properly.
7. Remove the lid and check that the dumplings are fluffy and cooked through. Taste and adjust the seasoning.
8. Serve hot with tender chicken, flavorful broth, and fluffy dumplings.
