No bake pineapple Cream Dessert

I made this on a random Tuesday night because I had a can of pineapple sitting in the pantry and honestly zero energy to turn on the oven. My husband walked into the kitchen an hour later, saw this sitting in the fridge, and said “Wait… you made dessert?” Like he couldn’t believe I pulled off something this good without breaking a sweat.
We ate it straight from the pan that night. No shame.
This no-bake pineapple cream dessert is one of those recipes that looks fancy but comes together so fast you’ll wonder why you ever stressed about dessert. Fluffy clouds of sweetened cream cheese. Juicy pineapple folded throughout. A buttery graham cracker crust that stays perfectly crisp. And that airy whipped topping that makes every bite feel like a tropical daydream.
It’s cool. It’s creamy. It’s sweet but not too sweet. And it tastes like summer even in the middle of winter.
**INGREDIENTS:**
– 1 can (20 oz) crushed pineapple, drained well
– 1 package (8 oz) cream cheese, softened
– 1/4 cup granulated sugar
– 1 tub (8 oz) Cool Whip, thawed
– 1 1/2 cups graham cracker crumbs
– 1/4 cup melted butter
– 2 tablespoons sugar (for crust)
**INSTRUCTIONS:**
Press graham cracker crumbs, melted butter, and 2 tablespoons sugar into the bottom of a 9×9 dish until firm and even.
Beat softened cream cheese and 1/4 cup sugar together until smooth and fluffy.
Fold in the Cool Whip gently until everything is light and creamy.
Stir in the drained pineapple until evenly mixed throughout.
Spread the creamy pineapple mixture over the graham cracker crust in an even layer.
Sprinkle extra graham cracker crumbs and a few spoonfuls of pineapple on top if you want it to look extra pretty.
Chill in the fridge for at least 2 hours until it sets up beautifully.
Slice into squares and watch it disappear.
This is one of those desserts that gets requested at every family gathering now. It’s light enough that you don’t feel guilty going back for seconds… but rich enough that you absolutely will.
