🧄 Roasted Garlic Butter Parmesan Potatoes

These Roasted Garlic Butter Parmesan Potatoes are crispy and golden on the outside, tender and buttery inside, and loaded with garlic, Parmesan, and herbs. They make an easy side dish for chicken, steak, pork, or a Sunday dinner.

🥔 Ingredients

  • 2 lbs baby Yukon Gold or yellow potatoes
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 5–6 cloves garlic, finely minced
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons additional Parmesan, for finishing

  1. Preheat the oven to 425°F (220°C). Lightly grease a large rimmed baking sheet or roasting pan.
  2. Prepare the potatoes: Wash the potatoes well and cut them into bite-sized halves or quarters, depending on their size. Try to keep the pieces relatively even so they cook at the same rate.
  3. Make the garlic butter: In a large bowl, combine the melted butter, olive oil, minced garlic, Italian seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Coat the potatoes: Add the potatoes and toss thoroughly until every piece is coated in the garlic-butter mixture.
  5. Add Parmesan: Sprinkle in ½ cup Parmesan and toss again until the potatoes are well coated.
  6. Arrange for roasting: Spread the potatoes onto the prepared pan in a single layer, cut side down when possible. Leave a little space between the pieces so they roast rather than steam.
  7. Roast: Bake for 35–45 minutes, turning the potatoes halfway through cooking. Continue roasting until deeply golden, crispy around the edges, and fork-tender.
  8. Finish: Remove from the oven and immediately sprinkle with the remaining Parmesan and fresh chopped parsley.
  9. Serve hot: Spoon the crispy potatoes onto a serving dish and drizzle with a little of the garlic butter left on the pan.

🔥 Tips for Extra-Crispy Potatoes

  • Don’t overcrowd the pan.
  • For especially crispy potatoes, soak the cut potatoes in cold water for 20–30 minutes, then drain and dry them very well before seasoning.
  • Freshly grated Parmesan melts and browns better than pre-shredded cheese.
  • Roast on the lower-middle oven rack for strong bottom browning.
  • For an extra-garlicky finish, toss the hot potatoes with 1 tablespoon melted garlic butter just before serving.
