Cabbage and Fatback

Ingredients:

  • 1 pound fatback, cut into small pieces
  • 1 large head cabbage, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups water or chicken broth
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon apple cider vinegar
  • Salt to taste

Instructions:

  1. Rinse the fatback under cold water to remove excess salt, then place it in a pot and cover with water. Bring to a boil, then drain and set aside.
  2. In a large pot, add the fatback and 4 cups of fresh water or broth. Bring to a simmer and cook for about 20–30 minutes to begin rendering flavor.
  3. Add the chopped onion and garlic, and cook for another 5–10 minutes until fragrant.
  4. Stir in the chopped cabbage, mixing well. Cover and let it cook down as it softens.
  5. Simmer for 30–40 minutes, stirring occasionally, until the cabbage is tender and flavorful.
  6. Season with black pepper and red pepper flakes if using. Taste and adjust salt carefully.
  7. Stir in the apple cider vinegar just before serving for a touch of brightness.
  8. Serve hot as a classic Southern side dish.
