Cabbage and Fatback
Ingredients:
- 1 pound fatback, cut into small pieces
- 1 large head cabbage, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups water or chicken broth
- 1 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon apple cider vinegar
- Salt to taste
Instructions:
- Rinse the fatback under cold water to remove excess salt, then place it in a pot and cover with water. Bring to a boil, then drain and set aside.
- In a large pot, add the fatback and 4 cups of fresh water or broth. Bring to a simmer and cook for about 20–30 minutes to begin rendering flavor.
- Add the chopped onion and garlic, and cook for another 5–10 minutes until fragrant.
- Stir in the chopped cabbage, mixing well. Cover and let it cook down as it softens.
- Simmer for 30–40 minutes, stirring occasionally, until the cabbage is tender and flavorful.
- Season with black pepper and red pepper flakes if using. Taste and adjust salt carefully.
- Stir in the apple cider vinegar just before serving for a touch of brightness.
- Serve hot as a classic Southern side dish.
