Country Fried Steak with Gravy

Ingredients

For the Steak

  • 4 cube steaks
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • Vegetable oil for frying


For the Gravy

  • 3 tbsp pan drippings (or butter)
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Season cube steaks on both sides with salt, black pepper, paprika, and garlic powder.
  2. Place flour in one shallow bowl. In another bowl, whisk together eggs and milk.
  3. Dredge each steak in flour, dip into egg mixture, then dredge again in flour, pressing coating firmly onto the meat.
  4. Heat about 1/2 inch of oil in a large skillet over medium heat. Fry steaks 3 to 4 minutes per side until golden brown and crispy. Remove and drain on paper towels.
  5. For the gravy, carefully pour off excess oil, leaving about 3 tablespoons of drippings in the skillet.
  6. Whisk in flour and cook for 1 to 2 minutes until lightly golden.
  7. Slowly whisk in milk, stirring constantly until smooth and thickened.
  8. Season with salt and black pepper.
  9. Serve the country fried steak hot, smothered generously with creamy gravy.
