Fried Catfish
Ingredients
- 4 catfish fillets
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup buttermilk
- Vegetable oil for frying
Instructions
- Rinse the catfish fillets and pat them dry with paper towels.
- Pour the buttermilk over the catfish and let soak for 15 to 20 minutes.
- In a shallow bowl, mix cornmeal, flour, salt, black pepper, paprika, garlic powder, and onion powder.
- Remove catfish from buttermilk, letting excess drip off, then dredge each fillet in the cornmeal mixture, pressing lightly to coat.
- Heat about 1 inch of vegetable oil in a heavy skillet over medium heat until hot.
- Carefully place the catfish in the oil and fry for 3 to 4 minutes per side until golden brown and crispy.
- Remove and drain on paper towels.
- Serve hot with coleslaw, hushpuppies, or sliced lemons.
