Ingredients

For the crust:

  • 1 9-inch pie crust (homemade or store-bought), unbaked

For the filling:

  • 4 large eggs

  • 1 cup heavy cream

  • 1 cup whole milk

  • 1 ½ cups shredded cheese (Gruyère, Swiss, cheddar, or a mix)

  • ½ cup cooked bacon or ham (optional)

  • 1 cup sautéed vegetables (spinach, mushrooms, onions, or peppers)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp ground nutmeg (secret ingredient!)

Instructions

1️⃣ Prep the Crust

  • Preheat oven to 375°F (190°C).

  • Place pie crust in a 9-inch pie dish.

  • Prick bottom with a fork.

  • Optional (for extra crisp crust): Blind bake for 10 minutes, then cool slightly.

2️⃣ Prepare Fillings

  • Cook bacon/ham if using.

  • Sauté vegetables until tender and moisture is cooked off (very important so quiche isn’t watery).

3️⃣ Make Custard

  • In a bowl, whisk eggs, heavy cream, milk, salt, pepper, and nutmeg until smooth.

4️⃣ Assemble

  • Sprinkle cheese evenly over crust.

  • Add meat and veggies.

  • Pour egg mixture over the top.

5️⃣ Bake

  • Bake 35–45 minutes until center is just set (slight jiggle is okay).

  • Let rest 10–15 minutes before slicing.
