Recipe for a Husband’s Happiness Strip Steak
Ingredients (serves 2):
– 2 New York strip steaks (about 1–1.5 inches thick)
– 2 tablespoons of olive oil (or vegetable oil)
3 tbsp butter
3 cloves of garlic, crushed
– 2–3 sprigs of fresh thyme or rosemary
Salt and freshly cracked black pepper (to taste).
Optional: A splash of Worcestershire sauce or finishing salt.
Instructions:
Prepare steaks:
Pat the steaks dry with kitchen roll.
Season generously with salt and black pepper on both sides.
Leave at room temperature for 20–30 minutes to help with even cooking.
Heat the pan.
Place a cast-iron skillet over a high heat until it is very hot.
Add the olive oil and swirl to coat the pan.
Sear the steaks.
Place the steaks in the pan — they should sizzle loudly.
Cook without moving for:
3–4 minutes on each side for medium-rare.
4–5 minutes on each side for medium.
Flip once and press lightly if needed.
Butter baste:
Add butter, crushed garlic and herbs to the pan.
Tilt the pan slightly and spoon the melted butter over the steaks repeatedly for one to two minutes.
Check doneness.
Internal temperature guide:
Rare: 125°F (52°C)
Medium-rare: 57°C (135°F)
Medium: 145°F (63°C).
Rest:
Remove the steaks from the skillet and allow them to rest for 5–7 minutes before slicing.
This ensures all the juices remain inside. 😍
Serve!
Pour the remaining butter sauce over the top.
Add a pinch of finishing salt if you like.
