Cowbot BEEF POTATO CASSEROLE

 My husband walked in from the garage, stopped mid-step, and said, “Whatever that is, I’m eating two plates.” He wasn’t kidding.
I threw this together on a Tuesday night when I had exactly one pound of ground beef, a bag of potatoes I kept meaning to use, and zero energy for anything complicated. What came out of that oven was so ridiculously good that my daughter — who usually picks at dinner — asked if we could have it again on Friday.
It’s one of those meals that feels like a warm hug in a casserole dish. The potatoes get tender and buttery, the beef cooks down into this savory, slightly peppery layer, and that melted cheddar on top? Absolutely no self-control required.
**INGREDIENTS:**
• 1 lb ground beef
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 4–5 medium potatoes, sliced thin (Yukon Gold or russets work great)
• 1 cup shredded cheddar cheese
• 1 can (10.5 oz) cream of mushroom soup (or cream of chicken — both work)
• ½ cup milk
• 1 tsp paprika
• Salt and pepper to taste
• Fresh parsley, chopped (for topping)
• Optional: diced bell pepper for extra color and sweetness
**INSTRUCTIONS:**
Preheat your oven to 375°F and lightly grease a 9×13 baking dish.
Brown the ground beef in a large skillet over medium heat until fully cooked and crumbly.
Add the chopped onion and garlic to the beef and cook until the onion softens and smells amazing — about 3–4 minutes.
Season the beef mixture with paprika, salt, and pepper, then remove from heat.
In a bowl, whisk together the cream of mushroom soup and milk until smooth.
Layer half of the sliced potatoes across the bottom of your baking dish.
Spoon half of the beef mixture over the potatoes, then drizzle half of the soup mixture on top.
Repeat with the remaining potatoes, beef, and soup.
Cover tightly with foil and bake for 50–60 minutes, until the potatoes are fork-tender.
Remove the foil, sprinkle the shredded cheddar evenly over the top, and bake uncovered for another 10 minutes until the cheese is melted and bubbly.
Let it rest for 5 minutes, then garnish with fresh parsley.
Serve it straight from the dish while it’s still steaming.
