I made these on a Sunday morning when the house smelled like cinnamon and butter, and my daughter wandered into the kitchen still half-asleep asking what smelled so good. By the time I’d rolled the last one in sugar, she’d already eaten three straight off the cooling rack.
These little pumpkin donut holes are exactly what fall mornings are supposed to taste like — warm, soft, and just sweet enough to feel like a treat without being too much before coffee. The pumpkin keeps them incredibly tender inside, and that cinnamon sugar coating? Dangerously good. I had to move the plate to the counter so I’d stop reaching for “just one more.”
What I love is how simple they are. Bisquick does most of the work, and you probably have everything else already. They bake up golden and pillowy, and rolling them in cinnamon sugar while they’re still warm makes them taste like you spent way more effort than you actually did.
**INGREDIENTS:**
• 2 cups Bisquick baking mix
• 1/4 cup sugar
• 1/2 tsp cinnamon
• 1/2 cup pumpkin puree
• 1/4 cup milk
• 1 egg
• 2 tbsp melted butter
• 1/2 tsp vanilla extract
• 1/4 tsp nutmeg (optional, but adds warmth)
**For coating:**
• 1/3 cup sugar
• 1 1/2 tsp cinnamon
• 3 tbsp melted butter
**INSTRUCTIONS:**
Preheat your oven to 375°F and lightly grease a mini muffin tin.
In a large bowl, whisk together the Bisquick, sugar, cinnamon, and nutmeg.
In another bowl, mix the pumpkin puree, milk, egg, melted butter, and vanilla until smooth.
Pour the wet ingredients into the dry and stir gently until just combined — don’t overmix or they’ll get dense.
Spoon the batter into the mini muffin cups, filling each about three-quarters full.
Bake for 10–12 minutes, until the tops spring back lightly when touched and the edges are just golden.
While they bake, mix your coating sugar and cinnamon in a shallow bowl, and melt your coating butter.
Let the donut holes cool for about 2 minutes, then brush each one with melted butter and roll in the cinnamon sugar while they’re still warm.
Serve them in a big pile on a plate and watch them disappear.
