Herb Parmesan Garlic Butter Chicken with Four-Cheese Spaghetti
Ingredients:
1.5 lbs boneless skinless chicken breasts, cut into thick bite-size pieces
1 tbsp Italian seasoning
1 tsp dried basil
1 tsp dried rosemary
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1/2 cup grated Parmesan cheese
2 tbsp olive oil
6 tbsp unsalted butter
7 garlic cloves, minced
3 tbsp fresh parsley, finely chopped
12 oz spaghetti
4 tbsp unsalted butter
4 garlic cloves, minced
2 cups heavy cream
4 oz cream cheese, softened and cubed
1 cup shredded low-moisture mozzarella cheese
1 cup shredded sharp cheddar cheese
1 cup freshly grated Parmesan cheese
3/4 cup shredded provolone cheese
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp black pepper
1/4 tsp salt
1/2 cup reserved pasta water
3 tbsp fresh parsley, finely chopped
Directions:
Pat chicken pieces dry and toss with Italian seasoning, basil, rosemary, garlic powder, salt, and black pepper. Press grated Parmesan firmly onto the pieces to form a light crust.
Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3–4 minutes per side until deep golden brown with crispy Parmesan-crusted edges and cooked through.
Reduce heat to medium. Add 6 tbsp butter and minced garlic, tossing the chicken in herby garlic butter for 1–2 minutes. Sprinkle with parsley and set aside warm.
Bring a large pot of salted water to a boil. Cook spaghetti until al dente, reserve 1/2 cup pasta water, then drain.
In a deep skillet, melt butter over medium heat. Add minced garlic and cook 1 minute until fragrant.
Pour in heavy cream and bring to a gentle simmer. Add cream cheese and whisk until smooth and silky.
Reduce heat to low and add mozzarella, cheddar, Parmesan, and provolone a handful at a time, stirring until the sauce is ultra-thick, glossy, and stretchy. Season with Italian seasoning, garlic powder, black pepper, and salt.
Add drained spaghetti and toss until every strand is heavily coated, splashing in reserved pasta water as needed. Stir in fresh parsley.
Plate the four-cheese spaghetti on one side and the herb Parmesan garlic butter chicken on the other, drizzling extra pan butter over the chicken.
