BAKED GARLIC PARMESAN POTATO WEDGES

This simple recipe for baked Parmesan and garlic potatoes is amazingly tasty! They make an excellent side dish or party appetiser!
Why not try them alongside your favourite foods? Other great options include potato salad with bacon and avocado, creamy and sweet macaroni salad, and broccoli and cauliflower with roasted lemon and garlic.

French fries are my weakness. Several times, my higher metabolism and my younger brother would get takeaways from the local Wendy’s, Carl’s Jr. or McDonald’s, which were open at this ungodly hour. In an attempt to control my addiction to adulthood, I tried ordering potato chips only occasionally when eating out, instead of following the motto of ‘potato chips with everything’ that I had supported for 20 years.

When my brothers and I went to IHOP for breakfast, I ordered chicken strips and fries. The pancakes are great, but nothing beats fries and ketchup.

These days, as I said, I try to order fries less often for obvious health reasons. Often, I only share with my husband; he doesn’t mind giving them up. Or 60%. It’s amazing like that.

And when I feel like having a variety of fries at home in my hoodie, I usually make them myself instead of ordering.

‘A medium potato, please.’

“Yes, that will be it.”

INGREDIENTS:

3–4 large red potatoes, sliced
4 tablespoons olive oil
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons Italian seasoning
½ cup grated Parmesan
Optional extras: fresh parsley (or coriander), ranch dressing or blue cheese for dipping.

INSTRUCTIONS:

Preheat the oven to 190°C. Lightly grease a large baking tray and set it aside.
Place the potato slices in a large bowl. Drizzle with olive oil and stir to coat. In a small bowl, combine the salt, garlic powder and Italian seasoning. Sprinkle the grated cheese over the potato slices, toss to coat, then sprinkle with the seasoning mixture.
Arrange the potato slices in a single layer on the prepared baking sheet, skin side down. Bake for 25 to 35 minutes, until the potatoes are tender and golden. Finally, sprinkle with freshly chopped parsley and vinaigrette.
