I made this cake on a random Tuesday because I had way too much Greek yogurt in the fridge and honestly wasn’t in the mood for another smoothie. My daughter walked into the kitchen while it was baking and said, “Mom, it smells like a bakery in here.” That’s when I knew this was going to be good.
This Flourless Vanilla Bean Greek Yogurt Cake is one of those recipes that feels fancy but comes together so easily you’ll wonder why you haven’t been making it every week. It’s soft, cloud-like, lightly sweet, and has this gorgeous real vanilla bean flavor that makes every bite feel special. The texture is somewhere between a traditional cake and a fluffy cheesecake—moist, tender, and just melts on your tongue.

**INGREDIENTS:**
**For the Cake:**
• 2 cups Greek yogurt (full-fat works best)

• 1 teaspoon baking powder

• 1/2 teaspoon vanilla extract
• 2–3 tablespoons Greek yogurt (to thin)
**INSTRUCTIONS:**
Preheat your oven to 350°F and line an 8-inch round or square baking pan with parchment paper.
In a large bowl, whisk together the Greek yogurt, eggs, honey, and vanilla bean paste until smooth and creamy.
In a separate bowl, combine the almond flour, baking powder, baking soda, and salt.
Gently fold the dry ingredients into the wet mixture until just combined—don’t overmix.
Pour the batter into your prepared pan and smooth the top.
Bake for 30–35 minutes, until the top is lightly golden and a toothpick inserted in the center comes out clean.
Let the cake cool completely in the pan before frosting.
For the frosting, beat the softened cream cheese with honey and vanilla until fluffy, then stir in Greek yogurt until you reach a smooth, spreadable consistency.
Spread the frosting over the cooled cake and sprinkle with a tiny pinch of red pepper flakes or lemon zest if you’re feeling fancy.
