I wasn’t even planning to bake. But I had a can of coconut milk sitting in the pantry, a bag of shredded coconut I forgot about, and suddenly I was pulling out the mixer. INGREDIENTS:
• 4 large eggs
• 2 cups granulated sugar
• 1/2 cup unsalted butter, melted
• 1 cup coconut milk
• 1 tsp vanilla extract
• 2 1/2 cups sweetened shredded coconut
• 1 cup all-purpose flour
• 1/2 tsp baking powder
• 1/4 tsp salt
• Extra shredded coconut for topping
INSTRUCTIONS:
Preheat your oven to 350°F and line a muffin tin with cupcake liners.
In a large bowl, whisk together the eggs and sugar until smooth and slightly fluffy.
Pour in the melted butter, coconut milk, and vanilla extract. Stir until everything is silky and combined.
Add the shredded coconut, flour, baking powder, and salt. Fold gently until just mixed—don’t overmix or they’ll lose that tender crumb.
Spoon the batter into the cupcake liners, filling each about 3/4 full.
Bake for 20–25 minutes, until the tops are golden and a toothpick comes out clean.
While they’re still warm, press extra shredded coconut onto the tops. It sticks beautifully and adds that bakery-style finish.
