Instructions

1. Prepare the cabbage

  • Preheat the oven to 425°F (220°C).
  • Remove any damaged outer leaves.
  • Slice the cabbage into ¾-inch (2 cm) thick rounds, keeping the core intact so the slices hold together.

2. Make the seasoning

In a small bowl, combine:

  • Olive oil

  • Garlic
  • Smoked paprika
  • Onion powder
  • Thyme
  • Salt
  • Black pepper
  • Red pepper flakes (if using)

3. Season

  • Arrange the cabbage steaks on a parchment-lined baking sheet.

4. Roast

  • Roast for 20 minutes.
  • Carefully flip each cabbage steak.
  • Roast another 15–20 minutes, until the edges are deeply browned and crispy.

5. Finish
