Simple and Fluffy Cake Recipe..

Ingredients

  • 1½ cups all-purpose flour

  • 1½ teaspoons baking powder

  • ¼ teaspoon salt

  • ½ cup (1 stick) unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs, room temperature

  • 1 teaspoon vanilla extract

  • ½ cup milk (whole or 2%), room temperature

Instructions

  1. Prepare the Oven & Pan

    • Preheat oven to 350°F (175°C).

    • Grease and flour an 8×8-inch pan (or line with parchment).

  2. Mix Dry Ingredients

    • In a small bowl, whisk together flour, baking powder, and salt. Set aside.

  3. Cream Butter and Sugar

    • In a large bowl, beat softened butter and sugar together for 2–3 minutes, until light and fluffy.

    • This step helps create the fluffiness!

  4. Add Eggs & Vanilla

    • Beat in the eggs one at a time.

    • Add vanilla extract and mix until smooth.

  5. Combine Batter

    • Add half of the dry ingredients, mix gently.

    • Add all of the milk, mix.

    • Add the remaining dry ingredients and mix just until combined (don’t overmix).

  6. Bake

    • Pour batter into the pan and smooth the top.

    • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool & Serve

    • Cool in the pan for 10 minutes, then move to a rack.

    • Dust with powdered sugar or frost if desired.
