1½ cups all-purpose flour

1½ teaspoons baking powder

¼ teaspoon salt

½ cup (1 stick) unsalted butter, softened

1 cup granulated sugar

2 large eggs, room temperature

1 teaspoon vanilla extract

½ cup milk (whole or 2%), room temperature
Instructions

Prepare the Oven & Pan

Preheat oven to 350°F (175°C).

Grease and flour an 8×8-inch pan (or line with parchment).

Mix Dry Ingredients

In a small bowl, whisk together flour, baking powder, and salt. Set aside.

Cream Butter and Sugar
-
In a large bowl, beat softened butter and sugar together for 2–3 minutes, until light and fluffy.

This step helps create the fluffiness!

Add Eggs & Vanilla

Beat in the eggs one at a time.

Add vanilla extract and mix until smooth.

Combine Batter
-
Add half of the dry ingredients, mix gently.

Add all of the milk, mix.
-
Add the remaining dry ingredients and mix just until combined (don’t overmix).

Bake
-
Pour batter into the pan and smooth the top.

Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

Cool & Serve

Cool in the pan for 10 minutes, then move to a rack.

Dust with powdered sugar or frost if desired.
