Homemade Corned Beef Pie Recipe

Cook time: 40–45 minutes

Ingredients:
For the filling:
- 1 large onion, finely chopped
- 1 tablespoon of vegetable oil or butter
- 1 tin (340–400 g) of corned beef, cubed or mashed
- 2–3 medium potatoes, peeled and diced
- Salt and black pepper (to taste).
- 1 tsp Worcestershire sauce (optional)
- ½ tsp dried thyme or parsley (optional).
- A splash of milk or a knob of butter to mash the potatoes.
For the pastry, you can either make it yourself or use two ready-rolled shortcrust pastry sheets:
- 400 g plain flour
- 200 g of cold butter or margarine, cubed
- pinch of salt
- Cold water to bind
- 1 beaten egg (for glazing)

Step 1: Prepare the pastry:

- Rub the butter into the flour and salt in a large bowl until the mixture resembles breadcrumbs.
- Add cold water a little at a time until the dough comes together.
- Split the dough into two balls for the top and bottom, wrap them in cling film and refrigerate for 30 minutes while you prepare the filling.
Step 2: Make the filling:
- Boil the diced potatoes in salted water until soft (about 10–12 minutes). Drain them and mash them with a splash of milk or butter.
- In a pan, heat the oil and gently fry the chopped onion until soft and golden.
- Stir in the corned beef, mashed potatoes and optional herbs/Worcestershire sauce.
- Mix everything together until combined, then season well with salt and pepper. Set aside to cool.
Step 3: assemble the pie:
- Preheat your oven to 190°C (375°F) or 170°C fan/gas mark 5.
- Roll out one ball of pastry and line a greased pie dish or cake tin.
- Spoon in the filling and level it out.
- Roll out the second ball of pastry and place it over the top. Trim and crimp the edges to seal.
- Make a small slit in the middle to allow steam to escape.
- Brush the top with beaten egg for a golden finish.
Step 4: Bake:
- Bake in the preheated oven for 40–45 minutes or until the pastry is golden brown and crispy.

- Serve warm or cold with baked beans, peas or a simple salad.
- It goes great with brown sauce or a splash of vinegar!
