Baby yellow and red potatoes
Olive oil
Fresh herbs (parsley, thyme)

Instructions:
Coat chicken breast with olive oil, garlic, parsley, thyme, Dijon mustard, lemon juice, salt, and pepper. Place in a baking dish with baby potatoes tossed in olive oil and herbs. Pour chicken broth around the meat and roast until the chicken is golden and juicy, and the potatoes are tender. Slice the chicken, drizzle with herb sauce from the pan, and serve with roasted potatoes.
