Roast pork with all the trimmings.

That’s a fantastic-looking roast pork dinner with all the traditional trimmings! I’ll provide a full recipe so you can recreate everything on this plate. This includes:

📝 Components on the plate:

  1. Roast pork with crackling.
  2. Gravy
  3. Roast potatoes
  4. Mashed potatoes
  5. Stuffing balls
  6. Yorkshire puddings
  7. Sliced and whole roasted carrots.
  8. Green peas
  9. Savoy cabbage
  10. Pigs in blankets (optional and not clearly visible, but often included).

🍖 1. Roast pork with crackling

Ingredients:

  • 1.5–2 kg pork shoulder or loin (skin on)
  • Salt
  • Olive oil
  • Optional extras: garlic and rosemary.

Instructions:

  1. Score the pork skin with a sharp knife.
  2. Rub with olive oil and a generous amount of salt. For best crackling, leave to sit uncovered in the fridge overnight.
  3. Preheat the oven to 240°C (465°F).
  4. Roast for 30 minutes at this high temperature to crisp up the crackling.
  5. Then, lower the oven temperature to 160°C (320°F) and roast for a further 2–2.5 hours.
  6. Rest the meat for 30 minutes before slicing.

🥔 2. Roast potatoes

Ingredients:

  • Floury potatoes (Maris Piper or King Edward)
  • Duck fat or vegetable oil
  • Salt

Instructions:

  1. Peel and chop the potatoes into chunks.
  2. Boil for 10 minutes, then drain and rough up the edges by shaking the potatoes in the pan.
  3. Heat the fat in a roasting tin in an oven preheated to 200°C (400°F).
  4. Add the potatoes to the hot fat and roast for 45–60 minutes, turning them occasionally.

🥔 3. Mashed potatoes

Ingredients:

  • 4 large potatoes
  • 50g butter
  • 100 ml milk or cream
  • Salt and pepper

Instructions:

  1. Boil the peeled potatoes until tender.
  2. Mash them with butter, warm milk or cream, salt and pepper.

🍞 4. Stuffing Balls

Ingredients:

  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)
  • 200 g of sausage meat or pork mince
  • 100 g breadcrumbs
  • 1 egg
  • Fresh sage or thyme
  • Salt and pepper

Instructions:

  1. Mix all the ingredients together in a bowl.
  2. Form the mixture into small balls.
  3. Bake at 180°C (355°F) for 25–30 minutes, or until golden brown.

🧁 5. Yorkshire puddings

Ingredients:

  • 140 g plain flour
  • 4 eggs
  • 200 ml milk
  • Salt
  • Beef dripping or oil

Instructions:

  1. Whisk the ingredients together to make a batter. Leave to rest for 30 minutes.
  2. Add the oil to a muffin tin and heat in the oven at 220°C (430°F).
  3. Pour the batter into the hot tin and cook for 20–25 minutes without opening the oven door.

🥕 6. Carrots (Two Ways)

Roasted Carrots:

  • Peel and roast large carrots with olive oil, salt, pepper for 35 mins at 200°C (400°F).

Boiled Sliced Carrots:

  • Slice carrots and boil for 10 mins, season with butter and salt.

🟢 7. Green Peas

  • Boil or steam for 5–7 mins, season with salt and butter.

🥬 8. Savoy Cabbage

  • Slice and boil for 5–6 mins, or steam. Add butter and seasoning.

🟤 9. Gravy

Ingredients:

  • Pan drippings

  • 1 tbsp flour

  • 500ml stock (chicken or vegetable)

Instructions:

  1. Stir flour into pan drippings over medium heat.

  2. Gradually add stock, stirring constantly.

  3. Simmer until thickened. Season to taste.

🐷 Optional: Pigs in Blankets

  • Wrap small sausages in bacon and roast at 200°C (400°F) for 25–30 mins.

🍽️ Final Assembly:

  1. Plate sliced roast pork, pour over gravy.

  2. Add mashed and roast potatoes.

  3. Arrange carrots, peas, cabbage.

  4. Add stuffing balls and Yorkshire puddings.

  5. Top with more gravy.
