Homemade Fried Chicken

🛒 Ingredients:

1.5 kg chicken pieces, thighs, drumsticks, and breasts
2 cups buttermilk
2 large eggs
2 1/2 cups all-purpose flour
1/2 cup cornstarch
2 tsp paprika
2 tsp garlic powder
1 1/2 tsp onion powder
1 tsp dried oregano
1 1/2 tsp salt
1 tsp black pepper
1/2 tsp cayenne pepper, optional
Vegetable oil, for frying

👩‍🍳 Directions:

Preheat the oven to 100°C (210°F) to keep the cooked chicken warm.
Whisk the buttermilk and eggs together. Add the chicken and let it soak for at least 30 minutes.
Mix the flour, cornstarch, paprika, garlic powder, onion powder, oregano, salt, black pepper, and optional cayenne.
Remove each chicken piece from the buttermilk and press it firmly into the seasoned flour mixture for a thick, crispy coating.
Heat about 5 cm (2 inches) of vegetable oil in a deep skillet to 175°C (350°F).
Fry the chicken in batches for about 12–15 minutes, turning occasionally, until crispy and golden. Larger pieces may need extra time.
Check that the thickest part of each piece reaches 74°C (165°F), then transfer to a wire rack and keep warm while frying the remaining chicken.
Let the chicken rest for 5 minutes, then serve hot with your favorite family-friendly sides.
