🍅 Creamy Tomato Tortellini Soup with Spinach

Ingredients
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon dried basil
- ÂĽ teaspoon red pepper flakes, optional
- 1 can (28 oz / 800 g) crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon sugar, optional
- 1 package (18–20 oz / 500–570 g) refrigerated cheese tortellini
- 3 cups fresh spinach
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- 1 tablespoon fresh parsley or basil, chopped
- Extra Parmesan, for serving
Instructions
- Sauté the aromatics
Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 4–5 minutes, until softened. - Add garlic and seasonings
Stir in the garlic, Italian seasoning, basil, and red pepper flakes. Cook for about 30 seconds, until fragrant. - Build the tomato broth
Add the tomato paste and cook for 1 minute. Pour in the crushed tomatoes and broth. Stir well. - Simmer
Bring the soup to a gentle boil, then reduce the heat and simmer uncovered for 15 minutes. Taste and add sugar if the tomatoes are particularly acidic. - Add the tortellini
Stir in the refrigerated tortellini and cook according to the package directions, usually 4–7 minutes, until tender. - Add spinach
Stir in the fresh spinach and let it cook for 1–2 minutes, just until wilted. - Make it creamy
Reduce the heat to low and stir in the heavy cream and Parmesan. Season with salt and black pepper. Don’t let it boil vigorously after adding the cream. - Serve
Ladle into bowls and top with extra Parmesan and fresh parsley or basil.
❤️ For an even richer soup
You can add 8 oz (225 g) Italian sausage. Brown the sausage in the pot first, breaking it into small pieces, then continue with the onion and garlic. It makes the soup especially hearty.
Tip: If you’re planning to have leftovers, cook the tortellini separately and add it to each bowl. Otherwise, it will continue absorbing the broth and become very soft.
