ROTEL TACOS RECIPE
INGREDIENTS (4 PORTIONS)
450 g ground beef (or ground turkey/chicken)
1 can (284 g / 10 oz) Rotel tomatoes with green chilies (mild or hot, to taste)
1 packet (28 g) taco seasoning (or 2-3 tablespoons homemade)
1/2 cup shredded cheddar or Mexican blend cheese (optional for added creaminess)
taco shells (hard or soft)
Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa, jalapeños, avocado
INSTRUCTIONS
Brown the meat
Brown the minced beef in a large frying pan over a medium heat until it is completely browned, breaking it up with a spoon.
Drain off excess fat.
Add spices and Rotel
Sprinkle taco seasoning over the meat.
Add the entire can of Rotel (with juice).
Stir well.
Allow to simmer
Reduce heat to medium-low.
Simmer uncovered for 5-7 minutes, stirring occasionally, until most of the liquid is reduced.
Season to taste with cheese (optional)
For a creamy, cheesy filling, stir in the grated cheese until melted.
Assemble the tacos
Stuff the Rotel taco filling into the taco shells.
Add toppings such as lettuce, tomato, cheese, sour cream or avocado.
