🍫 Sugar-Free Chocolate Oatmeal Bars
These chewy, buttery oatmeal bars topped with smooth chocolate are a holiday favorite! They’re easy to make, freezer-friendly, and have that irresistible combination of crunchy oats, rich chocolate, and a soft caramel-like base.

Ingredients
For the oat base:
- 1 cup unsalted butter
- 1 cup granulated sugar substitute suitable for baking, such as allulose or monk-fruit/erythritol blend
- 1/2 cup brown-sugar substitute
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3 cups quick-cooking oats
For the chocolate topping:

- 1/2 cup creamy peanut butter
- 1/2 cup chopped pecans or walnuts, optional
Instructions
- Prepare the pan:
Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal. - Make the oat mixture:
In a large saucepan over medium heat, melt the butter. Stir in the sugar substitute, brown-sugar substitute, vanilla, and salt. - Bring the mixture to a gentle simmer and cook for 2–3 minutes, stirring constantly.
- Remove from the heat and stir in the quick-cooking oats until completely coated.
- Build the base:
Press about two-thirds of the oat mixture firmly into the prepared pan. Set aside the remaining oats. - Make the chocolate layer:
Melt the sugar-free chocolate chips and peanut butter together in a microwave-safe bowl in 20–30 second intervals, stirring between each interval until smooth. - Spread the melted chocolate mixture evenly over the oat layer.
- Sprinkle the remaining oat mixture over the chocolate. Gently press it down so it sticks to the chocolate.
- Chill:
Refrigerate for 1–2 hours, or until completely firm. - Lift the bars from the pan using the parchment paper and cut into squares.

Place the cut bars in an airtight freezer container, separating layers with parchment paper. Freeze for up to 2–3 months.
Let them thaw at room temperature for about 10–15 minutes before serving.
