Peanut Brittle
Ingredients:
• 2 cups granulated sugar
• 1 cup light corn syrup
• ½ cup water
• 2 cups roasted unsalted peanuts
• 2 tbsp unsalted butter
• 1 tsp vanilla extract
• 1 tsp baking soda
• ½ tsp salt
Method:
1. Line a large baking sheet with parchment paper and lightly grease it with butter.
2. In a heavy-bottomed saucepan, combine the sugar, corn syrup, water, and salt. Cook over medium heat, stirring until the sugar dissolves.
3. Bring the mixture to a boil and cook without stirring until it reaches 250°F (120°C).
4. Stir in the roasted peanuts and continue cooking until the mixture reaches 300°F (149°C) and turns a rich golden color.
5. Remove from the heat and quickly stir in the butter and vanilla. Add the baking soda and stir carefully—the mixture will foam up.
6. Immediately pour the hot mixture onto the prepared baking sheet and spread it into a thin, even layer.
7. Let it cool completely for 1–2 hours, until hard and crisp.
8. Break the brittle into pieces and serve. Store in an airtight container at room temperature. ![]()
