Fried Pecan Pies
Ingredients:
1 package refrigerated pie crusts
1 cup chopped pecans
1/2 cup brown sugar
1/4 cup corn syrup
2 tablespoons melted butter
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 egg
Vegetable oil for frying
Powdered sugar for dusting
Instructions:
In a mixing bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, cinnamon, and egg. Stir until fully mixed.
Roll out the pie crusts and cut them into small circles using a bowl or large cookie cutter. Spoon a small amount of pecan filling into the center of each circle. Fold the dough over to create half-moon pies and press the edges tightly with a fork to seal.
Heat vegetable oil in a deep skillet or pot over medium heat. Carefully place the pies into the hot oil and fry for 2–3 minutes per side, or until golden brown and crispy.
Remove the pies and place them on paper towels to drain excess oil. Let them cool slightly, then dust with powdered sugar before serving.
