Fried Sweet Potatoes

Ingredients:

4 medium sweet potatoes, peeled and sliced
3 tablespoons butter
2 tablespoons brown sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon vanilla extract
Optional: chopped pecans for garnish

Instructions:

Peel the sweet potatoes and slice them into thin rounds or small cubes. Heat the butter in a large skillet over medium heat. Add the sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.

Sprinkle in the brown sugar, cinnamon, salt, and black pepper. Stir well to coat the potatoes evenly. Continue cooking for another 10–15 minutes, stirring gently, until the sweet potatoes are tender and caramelized on the outside.

Add the vanilla extract during the last minute of cooking and stir well. Remove from heat and garnish with chopped pecans if desired. Serve warm as a delicious Southern side dish.
