Chicken Fried Rice
Ingredients:
- 2 cups cooked rice, chilled
- 2 chicken breasts, diced
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1 cup mixed vegetables
- 3 green onions, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon black pepper
Instructions:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until browned and fully cooked. Remove and set aside.
Add the remaining oil to the skillet. Pour in the beaten eggs and scramble until cooked.
Stir in the garlic, mixed vegetables, and green onions. Cook for 2–3 minutes until tender.
Add the chilled rice and cooked chicken to the skillet. Stir well and cook for several minutes until everything is heated through.
Pour in the soy sauce and sesame oil. Season with black pepper and stir until evenly coated.
Serve hot as a quick and flavorful meal.
