Fried Okra and Tomatoes
Ingredients:
- 1 pound fresh okra, sliced
- 2 large tomatoes, chopped
- 1 small onion, chopped
- 1/2 cup cornmeal
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 3 tablespoons bacon grease or vegetable oil
Instructions:
In a bowl, combine the sliced okra with the cornmeal, flour, salt, black pepper, and garlic powder. Toss until evenly coated.
Heat the bacon grease or vegetable oil in a large skillet over medium heat. Add the coated okra and cook for about 8–10 minutes, stirring occasionally, until lightly crispy.
Add the chopped onion and tomatoes to the skillet. Continue cooking for another 5–7 minutes until the tomatoes soften and everything is well combined.
Serve hot as a classic Southern side dish.
