🍱 Easy Chicken Teriyaki Stir-Fry (Tub Meal Prep)
🛒 Ingredients (2–3 servings)
- 2 chicken breasts (cut into bite-sized pieces)
- 2 cups mixed vegetables (broccoli, bell peppers, carrots, snap peas)
- 2 cloves garlic (minced)
- 1 tbsp fresh ginger (grated, optional)
- 2 tbsp oil (vegetable or sesame)
- 3–4 tbsp teriyaki sauce (store-bought or homemade)
- 1 tbsp soy sauce
- 1 tsp honey or sugar (optional, for extra sweetness)
- Cooked rice or noodles (for serving)
🍳 Instructions
- Prep your “tub”
- Chop chicken and vegetables.
- Store them together in a container (your “tub”) if prepping ahead.
- Cook the chicken
- Heat oil in a large pan or wok over medium-high heat.
- Add chicken pieces and cook for 5–6 minutes until browned and cooked through.
- Add aromatics
- Toss in garlic and ginger. Stir for about 30 seconds until fragrant.
- Stir-fry vegetables
- Add your mixed vegetables.
- Cook for 3–5 minutes until tender but still crisp.
- Add sauce
- Pour in teriyaki sauce, soy sauce, and honey (if using).
- Stir well to coat everything evenly. Let simmer 2–3 minutes.
- Serve or store
- Serve hot over rice or noodles.
- Or divide into meal prep tubs for later (keeps 3–4 days in the fridge).
