🍱 Easy Chicken Teriyaki Stir-Fry (Tub Meal Prep)

🛒 Ingredients (2–3 servings)

  • 2 chicken breasts (cut into bite-sized pieces)
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots, snap peas)
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated, optional)
  • 2 tbsp oil (vegetable or sesame)
  • 3–4 tbsp teriyaki sauce (store-bought or homemade)
  • 1 tbsp soy sauce
  • 1 tsp honey or sugar (optional, for extra sweetness)
  • Cooked rice or noodles (for serving)

🍳 Instructions

  1. Prep your “tub”
    • Chop chicken and vegetables.
    • Store them together in a container (your “tub”) if prepping ahead.
  2. Cook the chicken
    • Heat oil in a large pan or wok over medium-high heat.
    • Add chicken pieces and cook for 5–6 minutes until browned and cooked through.
  3. Add aromatics
    • Toss in garlic and ginger. Stir for about 30 seconds until fragrant.
  4. Stir-fry vegetables
    • Add your mixed vegetables.
    • Cook for 3–5 minutes until tender but still crisp.
  5. Add sauce
    • Pour in teriyaki sauce, soy sauce, and honey (if using).
    • Stir well to coat everything evenly. Let simmer 2–3 minutes.
  6. Serve or store
    • Serve hot over rice or noodles.
    • Or divide into meal prep tubs for later (keeps 3–4 days in the fridge).
