1 cup chopped pecans

1 cup brown sugar

½ cup all-purpose flour

2 large eggs

½ cup melted butter (slightly cooled)

1 tsp vanilla extract

Pinch of salt
(No corn syrup needed!)

1️⃣ Prep

Preheat oven to 175°C / 350°F.

Grease a mini muffin pan well (very important).
2️⃣ Mix

In a bowl, whisk eggs, brown sugar, butter, and vanilla.

Stir in flour and salt until smooth.

Fold in chopped pecans.
3️⃣ Fill

Spoon batter into mini muffin cups, filling about ¾ full.
4️⃣ Bake

Bake 18–20 minutes until set and lightly golden.

Centers should be soft but not wet.

Let cool 10 minutes before removing.

Use a knife if needed — they release easier once slightly cooled.
