🧾 Ingredients

  • 1 cup chopped pecans

  • 1 cup brown sugar

  • ½ cup all-purpose flour

  • 2 large eggs

  • ½ cup melted butter (slightly cooled)

  • 1 tsp vanilla extract

  • Pinch of salt

(No corn syrup needed!)

👩‍🍳 Instructions

1️⃣ Prep

  • Preheat oven to 175°C / 350°F.

  • Grease a mini muffin pan well (very important).

2️⃣ Mix

  • In a bowl, whisk eggs, brown sugar, butter, and vanilla.

  • Stir in flour and salt until smooth.

  • Fold in chopped pecans.

3️⃣ Fill

  • Spoon batter into mini muffin cups, filling about ¾ full.

4️⃣ Bake

  • Bake 18–20 minutes until set and lightly golden.

  • Centers should be soft but not wet.

5️⃣ Cool

  • Let cool 10 minutes before removing.

  • Use a knife if needed — they release easier once slightly cooled.

✨ Optional Upgrades

  • Add ½ tsp cinnamon or nutmeg

  • Press a pecan half on top before baking

  • Drizzle with caramel or chocolate

  • Serve with whipped cream or vanilla ice cream
