🥘 Classic Beef Casserole

🧾 Ingredients

  • 800 g (1¾ lb) stewing beef, large chunks

  • 2 tbsp olive oil

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 3 carrots, sliced

  • 2 tbsp tomato paste

  • 2 tbsp flour

  • 2 cups beef stock

  • 1 cup red wine (or extra stock)

  • 1 tsp dried thyme

  • 1 bay leaf

  • Salt & black pepper

Optional but elite:

  • Mushrooms 🍄

  • Potatoes 🥔

  • Splash of Worcestershire sauce

👩‍🍳 Instructions

1️⃣ Brown the beef

  • Preheat oven to 160°C / 325°F.

  • Season beef well.

  • Heat oil in an ovenproof pot.

  • Brown beef in batches. Remove.

2️⃣ Build flavor

  • In same pot, cook onion until soft.

  • Add garlic, cook 30 sec.

  • Stir in tomato paste and flour.

3️⃣ Deglaze

  • Pour in wine, scraping the pot.

  • Add stock, herbs, bay leaf, Worcestershire.

  • Bring to a gentle simmer.

4️⃣ Slow cook

  • Return beef (and veg if using).

  • Cover and bake 2–2½ hours, stirring once.

5️⃣ Finish

  • Remove bay leaf.

  • Taste, adjust seasoning.

  • Rest 10 minutes before serving.

🍽️ Serve with

  • Mashed potatoes 🧈

  • Crusty bread 🥖

  • Buttered noodles 🍜
