🍞 Irish Tea Brack (Irish Tea Bread)

🧾 Ingredients

2 cups mixed dried fruit (raisins, sultanas, currants)

1 ½ cups hot strong black tea (no milk)

2 cups all-purpose flour

1 tsp baking soda
-
1 tsp mixed spice (or cinnamon + nutmeg)

½ cup brown sugar
-
1 egg, beaten

Pinch of salt
👩🍳 Instructions
1️⃣ Soak the fruit

Place dried fruit in a bowl.

Pour hot tea over it.

Cover and soak 1–2 hours (or overnight for best flavor).

Do not drain.
2️⃣ Prep oven

Preheat to 170°C / 340°F.

Grease or line a loaf pan.
3️⃣ Mix dry ingredients

In a large bowl, whisk flour, baking soda, mixed spice, sugar, and salt.
4️⃣ Combine

Add soaked fruit with all the tea.

Stir in beaten egg.

Mix until just combined (don’t overmix).
5️⃣ Bake

Pour batter into loaf pan.

Bake 55–65 minutes.

If browning too fast, tent loosely with foil.
6️⃣ Cool & serve

Cool in pan 10 minutes, then transfer to a rack.

Slice and serve with butter ☺️
