🍌 Banana Bread Cake

🧾 Ingredients

Dry:

  • 2 cups (250 g) all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon (optional)

Wet:

  • ½ cup (115 g) unsalted butter, melted

  • ¾ cup (150 g) sugar (white or brown — brown makes it extra moist)

  • 2 large eggs

  • 1 tsp vanilla extract

  • 4 ripe bananas, mashed (about 1½ cups)

  • ½ cup (120 ml) milk or yogurt or sour cream

Optional add-ins:

  • ½ cup chopped walnuts

  • ½ cup chocolate chips

🧁 Instructions

  1. Preheat oven to 175°C / 350°F
    Grease a 9×9 inch pan or line with parchment paper.

  2. In a bowl, whisk together flour, baking soda, salt, cinnamon.

  3. In another bowl, mix melted butter + sugar until glossy.

  4. Beat in eggs, then add vanilla.

  5. Mix in mashed bananas and milk/yogurt.

  6. Gently fold in the dry ingredients until just combined.
    (Do not overmix)

  7. Fold in any nuts or chocolate chips.

  8. Pour batter into pan and smooth top.

  9. Bake 35–45 minutes
    until a toothpick comes out clean.

  10. Cool completely before slicing.

🧈 Optional Cream Cheese Frosting (for “cake” style)

  • 100 g cream cheese, softened

  • 2 tbsp butter, softened

  • 1 cup powdered sugar

  • 1 tsp vanilla

Beat until fluffy and spread on cooled cake.
