SALT & PEPPER CHIPS, EGG FRIED RICE & CURRY SAUCE

(Takeaway-Style, Meal Prep Friendly)

🍟 1. Salt & Pepper Chips

Ingredients

  • 4 large potatoes (or 600–700g frozen fries)

  • 1 tbsp oil

  • 1 green pepper, sliced

  • 1 red pepper, sliced

  • 1 onion, sliced

  • 2–3 garlic cloves, chopped

  • 1 tsp chilli flakes (optional)

  • Salt & Pepper Seasoning mix:

    • 1 tsp salt

    • 1 tsp black pepper

    • 1 tsp Chinese 5 spice

    • ½ tsp garlic powder

    • ½ tsp onion powder

Instructions

  1. Cook the chips:
    Bake or air-fry until golden and crispy.

  2. Sauté the veg:
    Heat oil in a pan. Add onion, peppers, garlic, and chilli flakes. Stir-fry 2–3 minutes.

  3. Season:
    Add the seasoning mix.

  4. Add the chips:
    Toss everything together until the chips are fully coated.

🍚 2. Egg Fried Rice

Ingredients

  • 2 cups cooked rice (cold, leftover works best)

  • 2 eggs

  • 2 tbsp oil

  • 2–3 tbsp soy sauce

  • 1 tsp sesame oil (optional)

  • ½ cup peas

  • ½ cup chopped spring onions

  • Pinch of black pepper

Instructions

  1. Heat oil in a wok.

  2. Scramble the eggs lightly and push them to one side.

  3. Add the rice, break it up, and stir-fry 2–3 min.

  4. Add peas, soy sauce, sesame oil, spring onions, and pepper.

  5. Mix the eggs back in and fry everything together.

🍛 3. Chinese Curry Sauce (Takeaway Style)

Ingredients

  • 2 tbsp oil

  • 1 onion, finely chopped

  • 2 tbsp curry powder (mild or medium)

  • 1 tbsp flour

  • ½ tsp turmeric

  • ½ tsp Chinese 5 spice

  • 2 cups chicken or vegetable stock

  • 1 tsp sugar

  • Splash of soy sauce

  • Pinch of salt & pepper

Instructions

  1. Heat oil and cook the onion until soft.

  2. Add curry powder, turmeric, and 5 spice — cook 30 seconds.

  3. Add flour and stir to form a paste.

  4. Gradually add the stock while whisking.

  5. Add sugar, soy sauce, salt, and pepper.

  6. Simmer 5–10 minutes until thick and smooth.
    (Blend if you want it extra smooth like takeout.)

🍱 ASSEMBLY (Meal Prep Style)

Fill your container with:

  • Bottom layer: Egg Fried Rice

  • Middle: Salt & Pepper Chips

  • Top: Pour over a generous amount of curry sauce (like the picture!)
