(Crunchy Cookie Crust, Rich Fudge Layer, Double Ice Cream Cake)

Ingredients
Cookie Crust (Base)
• 2 cups crushed chocolate cookies (Oreo, Eti Negro, etc. with cream filling)
• 5 tbsp melted butter
• 1 tbsp sugar (optional)
Fudge Layer
• 1 cup chocolate (milk or dark)
• 1/2 cup heavy cream
• 2 tbsp butter
• 1/4 cup sugar
• 1 tsp vanilla
• A pinch of salt
Ice Cream Layers
• 3 cups chocolate ice cream (softened)
• 3 cups vanilla ice cream (softened)
Topping (optional but legendary!)
• Chocolate sauce
• Chocolate chips
• Crumbled cookies
• Whipped cream
Preparation
Prepare the Cookie Base
1. Mix the crushed cookies with melted butter in a bowl.
2. Press the mixture into the bottom of a springform pan (20–22 cm).
3. Chill in the refrigerator for 15 minutes or in the freezer for 5 minutes.
The base should be completely firm.
Make the Fudge Layer
1. Heat the cream + sugar + butter in a small saucepan.
2. Remove from heat before it reaches boiling point.
3. Add the chocolate and stir until completely melted.
4. Add the vanilla and salt.
5. Pour over the cookie crust when slightly cooled.
6. Leave in the freezer for 20–30 minutes to harden.
The rich, shiny, and smooth fudge layer is the star of this cake!
Add the Ice Cream Layers
Chocolate layer:
• Pour the softened chocolate ice cream over the fudge layer.
• Smooth it out with a spatula.
• Freeze for 20–30 minutes (to prevent the layers from mixing).
Vanilla layer:
• Spread the vanilla ice cream on top in the same way and smooth it out.
• Freeze for at least 4 hours, or ideally overnight.
Topping
Before serving:
• If desired, drizzle with a thin chocolate sauce,
• Sprinkle chocolate chips or crushed crispy biscuits on top.
Let the cake sit at room temperature for 5–10 minutes, then cut → razor-sharp slices!
