🍞 Sweet Alabama Pecan Bread Recipe

1 cup brown sugar (packed)

1 cup granulated sugar

1 cup vegetable oil (or melted butter for richer flavor)

4 large eggs

1½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon vanilla extract

2 cups finely chopped pecans
Instructions

Preheat oven:
Set your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or two loaf pans. -
Mix wet ingredients:
In a large bowl, whisk together brown sugar, granulated sugar, oil, and eggs until smooth. -
Combine dry ingredients:
In another bowl, stir together flour, baking powder, and salt. -
Combine batter:
Add the dry mixture into the wet mixture. Stir until just combined — don’t overmix. -
Add vanilla & pecans:
Stir in vanilla extract and the chopped pecans. -
Bake:
Pour the batter into your prepared pan(s) and spread evenly.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. -
Cool and serve:
Let the bread cool in the pan for about 10 minutes before slicing. Serve warm or at room temperature.
