Punjabi Mutton
Ingredients – Marination:
500g Mutton
1tsp Salt
1/2tsp Turmeric Powder
2tsp Degi Mirch
100g Curd
Method:
1. Marinate mutton with above ingredients for 1 hour.
Ground Paste :
2tbsp Oil
Whole Spices 
Fennel seeds- 1 tsp
Green cardamom- 5
Cloves- 5
Cinnamon- 2 small pieces
Black cardamom- 1
Black peppercorns- 10
2 Onions (medium sized)
2 Tomatoes (medium sized)
Method :
1. Heat oil in a pan. Add whole spices. Saute for few seconds.
2. Add sliced onions. Saute till translucent.
3. Add tomatoes. Cook till soft.
5. Cool and grind to a fine paste using 1/4 cup water.
Final dish
4tbsp Oil
1tbsp Ginger Garlic Paste
1tsp K. Red Chilli Powder
2tsp Coriander Powder
1tsp Cumin Powder
300ml Water
1/2tsp Salt or as per taste
1/4tsp Garam Masala
1tsp Kasuri Methi
Method :
1. Heat oil in a pressure cooker. Add ginger garlic paste. Saute for a min.
2. Add ground paste. Cook till oil separates.
3. Add marinated mutton and cut on high flame for 5 mins.
4. Add red chilli powder, coriander powder and cumin powder. Mix well and cook till oil separates.
5. Add water, salt and garam masala. Bring to a boil.
6. Close pressure cooker. Cook on high flame till 1 whistle and the lower the flame and take 4 more whistles.
7. Sprinkle kasuri methi on the top.
8. Serve with roti, paratha and sirke wale pyaaz. Enjoy
