🍲 Lasagna Soup

Ingredients:

  • 1 lb ground beef or Italian sausage

  • 1 tbsp olive oil (if needed)

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 2 tsp Italian seasoning

  • 1 (14.5 oz) can diced tomatoes

  • 1 (15 oz) can tomato sauce

  • 4 cups beef or chicken broth

  • 8 lasagna noodles, broken into pieces

  • Salt and black pepper, to taste

  • 1 cup shredded mozzarella cheese

  • Β½ cup ricotta cheese

  • 2 tbsp grated Parmesan cheese

  • Fresh basil or parsley, for garnish

Instructions:

  1. Cook the meat: In a large pot, brown the ground beef or sausage over medium heat. Drain excess fat if needed.

  2. Add aromatics: Add onion and cook until softened, about 3–4 minutes. Stir in garlic and Italian seasoning, cooking another 30 seconds.

  3. Build the soup base: Add diced tomatoes, tomato sauce, and broth. Stir well and bring to a simmer.

  4. Add noodles: Stir in the broken lasagna noodles. Cook uncovered for 10–12 minutes, until noodles are tender. Season with salt and pepper.

  5. Make it cheesy: Stir in mozzarella and ricotta until creamy and slightly melted.

  6. Serve: Ladle into bowls, top with Parmesan and fresh basil or parsley.

Tip:
For extra richness, add a splash of cream or a dollop of ricotta right before serving.
