π² Lasagna Soup
Ingredients:

1 lb ground beef or Italian sausage

1 tbsp olive oil (if needed)

1 medium onion, chopped

3 cloves garlic, minced

2 tsp Italian seasoning

1 (14.5 oz) can diced tomatoes

1 (15 oz) can tomato sauce
-
4 cups beef or chicken broth
-
8 lasagna noodles, broken into pieces

Salt and black pepper, to taste

1 cup shredded mozzarella cheese
-
Β½ cup ricotta cheese
-
2 tbsp grated Parmesan cheese
-
Fresh basil or parsley, for garnish
Instructions:

Cook the meat: In a large pot, brown the ground beef or sausage over medium heat. Drain excess fat if needed.

Add aromatics: Add onion and cook until softened, about 3β4 minutes. Stir in garlic and Italian seasoning, cooking another 30 seconds.

Build the soup base: Add diced tomatoes, tomato sauce, and broth. Stir well and bring to a simmer.

Add noodles: Stir in the broken lasagna noodles. Cook uncovered for 10β12 minutes, until noodles are tender. Season with salt and pepper.

Make it cheesy: Stir in mozzarella and ricotta until creamy and slightly melted.

Serve: Ladle into bowls, top with Parmesan and fresh basil or parsley.
Tip:
For extra richness, add a splash of cream or a dollop of ricotta right before serving.
