🧀 Cheese scones recipe

Ingredients (makes 8–10 scones):

  • 225 g (2 cups) of self-raising flour
  • 1 tsp baking powder
  • ½ teaspoon of salt
  • ½ teaspoon of mustard powder (optional, to enhance the cheese flavour).
  • 50 g (3½ tbsp) of cold, diced, unsalted butter
  • 125 g (1¼ cups) of mature cheddar cheese, grated (plus extra for the topping).
  • 150 ml (⅔ cup) milk (plus a little extra for brushing).

Method:

  1. Preheat the oven to 200°C (180°C fan)/400°F/Gas Mark 6. Line a baking tray with parchment paper.
  2. Mix the dry ingredients: in a bowl, combine the flour, baking powder, salt and mustard powder.
  3. Rub in the butter, adding it diced and rubbing it into the flour with your fingertips until the mixture resembles fine breadcrumbs.
  4. Add the grated cheese and stir it in, keeping a little aside for sprinkling on top.
  5. Bring the dough together by pouring in most of the milk and mixing gently with a knife until it just comes together into a soft dough. Add a splash more milk if needed. Don’t overwork it.
  6. Shape and cut: Tip the dough out onto a lightly floured surface and pat it to a thickness of about 2–2.5 cm (don’t roll it). Cut out rounds with a floured cutter.
  7. Place the rounds on a baking tray, brush the tops with milk and sprinkle with the reserved cheese. Bake for 12–15 minutes until golden and risen.
  8. Leave to cool slightly, then transfer to a wire rack. Once cool enough to handle, split in half and generously spread with butter.

🍴 Serving suggestions:

  • Enjoy warm with the butter melting inside.
  • Add a little chutney or pickle for extra tang.
  • Serve alongside soup for a comforting meal.
