I’d been staring at leftover bacon in the fridge for two days, trying to figure out what to do with it besides the usual breakfast routine. Then I remembered these little bacon-wrapped cream cheese bites my sister-in-law brought to a cookout last summer — the ones that disappeared before the burgers even came off the grill. I had everything I needed already sitting in my fridge, so I just went for it.
These Jalapeño Bacon Ranch Cream Cheese Bites are dangerously good. Like, hide-a-few-in-the-back-of-the-oven-before-anyone-sees kind of good. The bacon gets crispy and caramelized on the edges, and when you bite in, you get this creamy, cheesy, slightly spicy center that just melts. The jalapeños give it just enough kick without being overwhelming — my kids even ate them, and they usually run from anything green.
**INGREDIENTS:**
• 1 lb bacon (not thick-cut — regular works better for wrapping)
• 8 oz cream cheese, softened
• 1 cup shredded cheddar cheese
• 2–3 tablespoons diced jalapeños (fresh or jarred — use less if you’re nervous about heat)
• 1 tablespoon ranch seasoning
• Toothpicks
*Swap idea: If you don’t have ranch seasoning, a little garlic powder and dried dill works too.*
**INSTRUCTIONS:**
Preheat your oven to 375°F and line a baking sheet with foil or parchment.
In a bowl, mix the softened cream cheese, shredded cheddar, diced jalapeños, and ranch seasoning until it’s all combined and creamy.
Cut each bacon strip in half so you have shorter pieces that are easier to wrap.
Scoop about a tablespoon of the cream cheese mixture and roll it into a small ball with your hands.
Wrap each ball with a half strip of bacon, tucking the end underneath so it stays put. Secure with a toothpick if needed.
Place them seam-side down on the baking sheet, leaving a little space between each one.
Bake for 25–30 minutes, until the bacon is crispy and deeply caramelized on the edges.
Let them cool for just a minute or two before serving — the cheese inside stays molten hot.
Serve with ranch or sour cream for dipping if you want, but honestly, they don’t need it.
