My teenage son walked into the kitchen last Saturday and said, “Mom, I need something that tastes like pizza but won’t wreck my macros.” I almost laughed — until I remembered these sitting in my recipe folder from last month. Twenty minutes later, he’d eaten six of them standing at the counter and asked if I could make a double batch next time.
These little pepperoni pizza bites are dangerously good. Crispy pepperoni edges, melted cheese in the middle, and that perfect pizza flavor without any of the carb guilt. I’ve been making them for game days, after-school snacks, and honestly? Late-night cravings when I just need something salty and cheesy without turning on the oven for a whole pizza.
The best part? You can pop them in your mouth like chips, but they actually fill you up. My husband tried one “just to taste” and ended up eating half the tray before I could plate them.
**INGREDIENTS:**
*Base:*
• 24–30 pepperoni slices (the regular deli kind works great)
*Filling:*
• ½ cup shredded mozzarella cheese
• ¼ cup ricotta or cream cheese (I use cream cheese when I’m out of ricotta — both work)
• 1 tbsp grated parmesan
• ½ tsp Italian seasoning
• Pinch of garlic powder (optional, but I always add it)
*For dipping:*
• Marinara or pizza sauce (sugar-free if you’re staying strict keto)
**INSTRUCTIONS:**
1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
2. Lay out half the pepperoni slices flat on the sheet — these are your bottoms. Space them out a bit so they don’t stick together.
3. In a small bowl, mix the mozzarella, ricotta (or cream cheese), parmesan, Italian seasoning, and garlic powder until it’s all combined and creamy.
4. Drop about a teaspoon of the cheese mixture onto the center of each pepperoni slice. Don’t overfill or it’ll ooze out everywhere (learned that the hard way).
5. Top each one with another pepperoni slice and press the edges down gently so they stick together.
6. Bake for 10–12 minutes, until the pepperoni edges start crisping up and the cheese is melted and bubbling inside.
7. Let them cool for just a minute — they’re molten lava hot straight out of the oven — then serve with warm marinara for dipping.
The edges get crispy like pepperoni chips, and when you bite in, the cheese pulls just like real pizza. I’ve started keeping a batch in the fridge because they reheat beautifully in the air fryer (3 minutes at 375°F and they’re perfect again).
